Roast Beef: Different Cuts From the Cow

A cow, when slaughtered is cut up into different sections, and different kinds of "cuts" come from these different sections of the cow. Below is a list of the different sections of the cow and the different cuts of meat, specifically roasts, that come from each of those sections:
| | Rib - whole standing rib roast (prime rib), rib roast - small end, rib roast large end, rib-eye roast, rib-eye bone-in. |
| | Short Loin - Whole fillet (tenderloin), top loin roast, tenderloin roast. |
| | Chuck - cross rib roast (shoulder clod) |
| | Sirloin - tri-tip (triangle roast), sirloin roast, sirloin tip roast, ball tip roast. |
| | Round - Rump roast, top round roast, eye of the round roast. |
