How to melt butter

1. Butter should never be melted at high heat.
2. On the stovetop, it should be melted over medium to medium-low heat, preferably in a heavy saucepan or double boiler.
3. In the microwave, set the power level to medium-low or 30%. The amount of time depends on the quantity of butter. The best idea is to watch it closely – butter that gets too hot foams up and spills over.
